Currently, all structures have this particular strange shade of green.
We'd really love different colors.

The easiest way is probably just, well. Pass a user-made shader in.

One neat approach could be to correlate the material color to the nk-plot of the medium, somehow. We needn't go so far as to generate a BRDF, but some kind of principled idea on the matter could be interesting.
